I have to share this amazing recipe with you! You can see the full recipe below along with the ingredients and instructions... | | Smothered Mexican Chicken Recipe | | Ingredients: - 2 organic chicken breasts
- Salt, pepper, cumin, garlic powder, and chili powder
- 3 tbsp coconut oil
- 1 green bell pepper
- 1 red bell pepper
- 1 red onion
- 1 can of black beans
- 1 cup organic cheddar cheese
- 2 tbsp salsa (healthy ingredients only 😉)
- Optional toppings: sour cream, cilantro, avocado
- Tortilla shells
Instructions: Season chicken with spices. Bake the chicken at 350 degrees F in a small baking dish until cooked through, approximately 45 minutes. Saute veggies in coconut oil in a frying pan. Place the sauteed veggies on top of the chicken once done. Cover with black beans. Top with cheese. Place back in the oven to melt the cheese. Top with optional toppings and salsa. Low Carb Plan Tip: My family likes to smother a whole chicken breast with the ingredients and skip the tortillas.
